waste water treatment, and adaptive winemaking techniques resulting in ‘clean wine’, which contains very low levels of histamine
and sulfites, thereby producing no red wine headaches or allergic reactions. The result in “We employ a fully integrated,
ecologically sensitive winemaking approach”, according to Winemaker, Robert Rex.
